Cider & Mustard Glazed Arctic Char with Roasted Asparagus

Cider & Mustard Glazed Arctic Char with Roasted Asparagus

Serves 4+

INGREDIENTS:

• 1 Fillet of Arctic Char, skin-on (1 1/2 - 2lbs)
• 2 Tablespoons Dijon Mustard
• 1/2 Cup Honey
• 1/4 Cup Apple Cider Vinegar
• 1 Small Shallot, thinly shaved
• 1 Bunch Asparagus, tough ends removed
• Olive Oil
• Salt
• OPTIONAL: Lemon wedges and fresh chives for garnish

DIRECTIONS:

1. Add mustard, honey, and cider vinegar to a mixing bowl and whisk to combine
2. Place the Arctic Char fillet on a well oiled, foil lined baking sheet. Using a pastry brush, completely coat the fillet with the glaze
3. Springle the shaved shallots over the top of the fillet and then give them another coat of the glaze
4. Place prepared asparagus around the rest of the tray. Season the asparagus and the fish with salt
5. Place the fish and asparagus into a pre-heated oven set to broil. Cook for 8-12 minutes depending on the size of the fish. Fish should be cooked to an internal temp of 145 degrees. Optionally, you can baste the fish with any extra glaze halfway through the cooking process
6. Remove and serve! Garnish with optional lemon wedges and chopped chives.
