Damariscotta oysters are harvested from the Damariscotta River of Maine, the renowned source of Maine’s finest oysters. It is a tidal river 19 miles in length.
The oysters are grown using an ecologically sound suspension method in the deepest hole of the river. Damariscotta oysters are characterized by a dense, chip resistant 3”+ shell. The meat is pleasantly firm, plump and of good yield. These oysters are collected and placed in the cold seawater of coastal Maine to purge themselves of any sand or grit. This last step brightens the briny upfront flavor.
A mildly sweet and lemony flavor is noticeable as the saltiness abates.
